About us
Savage Winery started with a hobby and a vision. The owner and vintner, Rich Byington, began as a wine hobbyist interested in producing concord wine for family and friends. This interest began to grow as positive feedback and encouragement came rolling in. Woodcock Brothers Brewing, a supporter from the start, encouraged Rich to take his business commercial. They stated that if Rich were to begin his commercialization process, they would carry his wine. Thus, he began the journey to create Savage Winery. Partnering with his brother, Russell Byington, they obtained licensing and began producing wine.
Since then, Savage Winery now produces over 20 wines and added their own line of hard ciders. In addition to their own product line, Savage Winery features guest wines as well as craft beer and spirits from around New York State.
Stop down and enjoy some wine tastings, flights of beer or cider, and much more! During the warmer weather, outdoor seating is available, as well as some outdoor games. Inside, however, you'll find our slushie machine featuring loganberry wine slushies and an additional rotating wine slushie flavor. Food, small snacks, and soda are also available, making a trip down to Savage Winery available for the whole family!
what we do
Wine & Hard Ciders
At both of our locations in Chaffee and Wilson, we feature our wines and hard ciders. We specialize primarily in sweet wines and ciders, and feature classic and unique flavors such as loganberry and black currant. Our hard ciders are all unfiltered with minimal preservatives, allowing us to provide the freshest and most natural ciders to our customers.
Our Farm
Savage Winery is a farm winery, sharing space with Gemstone Alpacas Inc. This farm was created in 2005, raising alpacas to bring to shows and utilize their fleece. Since then, we have added sheep, goats, and chickens to our family.
Events at Savage
Interested in hosting an event at Savage Winery? Drop us a line! We have an outdoor gazebo for smaller gatherings to reserve, in addition to a large outdoor event tent for our larger gatherings. All events, public or private, are held outdoors.
